Morning wake-up call, with a freshly brewed tea/coffee trays are available upon request.
Breakfast
- Freshly Baked Pastries, Breads or Muffins

- Selection of Cereals & Yoghurts
- Choice of daily breakfast special, or alternatively, eggs of choice cooked to order with crispy bacon and sausage sides
Breakfast Specials
- Blueberry pancakes with warm maple syrup and crispy bacon
- Traditional Eggs Benedict
- Omelettes cooked to order with choice of fresh fillings
- Cinnamon French toast with caramelized tropical fruits
- Smoked Salmon platter with a lemon and caper dressing and poppy seed bagels
Freshly brewed coffee, an assortment of speciality teas and a selection of fruit juices are served throughout the morning.
Lunch
- Spicy Chicken Koftas served with a roasted vegetable and mixed grain salad and a whipped avocado, mint and yogurt dressing
- Pumpkin, spinach and feta risotto with crispy pancetta and a baby leaf and Parmesan salad
- Fiery shrimp skewers with tamarind glaze and coconut rice
- Beef Teriyaki with tempura onions and an Asian slaw
- Grilled Lobster and garlic herb butter linguine with a mixed leaf strawberry salad and raspberry vinaigrette
- Sesame seared tuna salad with wasabi dressing served with a seaweed and pickled ginger salad
- Sundried Tomato and Chorizo Tart, with a green olive, walnut and pomegranate salad
After lunch a selection of sorbets, ice creams or a mixed cheese platter with crackers, fresh fruits and chutneys are on offer, along with speciality coffees (espressos, cappuccinos etc).

Evening Menu
- Thai Salmon and sweet potato cakes, with sweet ginger chilli dressing
- Pan roasted duck in a spicy citrus broth with a green papaya, noodle salad
- Minted lime sorbet
- Seared Scallops served with a green pea puree
- Herb crusted rack of lamb, with a spicy eggplant relish served with a tomato, tarragon and bulgar wheat salad
- Red wine poached pears with mascarpone
- Cumin spiced pumpkin soup
- West Indies blackened Mahi Mahi with sweet potato mash and a jalapeno mango salsa
- Banana rum parfait with cinnamon glazed pineapple
- Peach and avocado salad with a ginger and coriander dressing
- Homemade chicken Penang curry (traditional Thai recipe with a peanut and coconut milk base) served with jasmine rice
- Coconut milk panacotta with a passion fruit coulis
- Proscuitto and rocket salad with truffle honey
- Pan Roasted Sea Bass on a citrus risotto with a balsamic beetroot reduction
- White chocolate and lemon cheesecake
- Garlic roasted Black Tiger shrimp in a parsley butter sauce
- Pork Fillet wrapped in Palma ham stuffed with leeks, dates and Gorgonzola on a bed of baby spinach and potato rosti
- Pear and frangipani tart with vanilla ice cream
- Goat’s cheese, beetroot and walnut stack
- Peppered beef fillet with creamed parsnip mash and honey roasted baby carrots
- Triple chocolate mouse with a Cointreau swirl
After dinner guests can choose from a selection of liqueurs, speciality coffees or teas.
Alternative dietary requirements are catered for upon request and a separate children’s menu is also available.
